I also took a guided tour of Southfork several years ago and can confirm that inside everything is so small and claustrophobic, with very low ceilings. I don't think each room is much more than 4 meters on each side.

As you say, it changes -- this isn't always consistent with what we saw:

Today on Warner TV's rerun of Dallas I followed JR's journey at home and away, discovering some interesting details.

I invite you to rewatch the following episode:

5324"The Wheeler Dealer"Alexander SingerBarbara SearlesMarch 14, 1980April 12, 198018815925.7/45[52]
With most of the family visiting Jock's first wife in a Colorado sanitarium, J.R. uses the time to try to set up an even bigger oil deal with the now profitable Asian wells. Sue Ellen and Pam deal with their separate grief in very different ways. Pam becomes determined to learn about her long-believed dead mother. Sue Ellen again seeks alcohol for her solace, which pleases J.R. since he plans to rid himself of his wife.

I recently watched the episode where Bobby wanted to build a shopping center on the edge of Southfork. In response to Miss Ellie's concerns, Jock replied that Ellie's father had allowed the house they now lived in to be built; otherwise, they would still be living in the little shack. What kind of "shack" was that? So, did Jock build the mansion? And where did the Southfork family live before? Was the old house torn down?

Home Again the episode where Garrison returns, provides an answer to this. I don’t recall the details exactly, but originally the house was a smaller home. After Jock and Miss Ellie got married, they built a new home.
Dallas: The Early Years uses the Southfork location we're familiar with and explores the pre-Jock storyline, including Jock and Ellie's relationship to save the ranch. However, there’s a continuity issue, the house shown isn’t the same one depicted in the original series painting. I doubt they even remembered the earlier detail to take into account when making the movie.
